Cocoa - almond - oatmeal cookies (Connie Golden, 03/2012)

Eat what you crave but save the calories for later with our healthier Awesome Oatmeal No Bake Cookies! Healthy ingredients, but high in calories.

Preparation Time: 15 min



  1. Combine first 5 ingredients in a saucepan. Cook, stirring, over medium heat until mixture boils.
  2. Remove from heat and add oatmeal, vanilla, and peanut butter or almond butter.
  3. Stir until thick. Quickly drop by tablespoons onto the waxed paper.
  4. Sprinkle some of the chopped almonds onto cookies
  5. Refrigerate until almost firm, about 2 hours.
  6. Take out of refrigerator and make each cookie into a ball. Roll in chopped almonds. Return to refrigerator where they will firm up and appear hard on the outside.
  7. Put into air-tight container to keep for days, if necessary.
