Cocoa - almond - oatmeal cookies (Connie Golden, 03/2012)

for later with our healthier Awesome Oatmeal No Bake Cookies! Healthy ingredients, but high in calories.
Preparation Time: 15 min
- 1 1/2 cups sugar
substitute (I used Xylitol)
- 1/2 cup healthy butter substitute (NOT margarine)
- 1/2 cup skim milk
- 1/3 cup unsweetened cocoa powder
- 1 dash salt or
- 3 cups oatmeal
(I used instant oatmeal with flax)
- 1/2 teaspoon vanilla extract
- 1/2 cup fat-free peanut butter or almond butter (I
used almond butter)
cup chopped roasted almonds (no salt)
- Combine first 5
ingredients in a saucepan. Cook, stirring, over medium heat until mixture
- Remove from heat
and add oatmeal, vanilla, and peanut butter or almond butter.
- Stir until
thick. Quickly drop by tablespoons onto the waxed paper.
- Sprinkle some of
the chopped almonds onto cookies
until almost firm, about 2 hours.
- Take out of
refrigerator and make each cookie into a ball. Roll in chopped almonds.
Return to refrigerator where they will firm up and appear hard on the
