Egg Sausage Casserole

1 pound mild Italian Sausage (remove from casing) cooked, but not dry

pound sharp cheddar cheese grated

8 slices bread crust removed


Egg Mixture

7 eggs

1 cups milk

teaspoon salt

1 teaspoons dry mustard

Ground pepper


Optional Items

Chopped green onions

Thin sliced zucchini

Chopped red bell pepper


Grease casserole, cut crust off of bread and fit into casserole dish, layer sausage, add optional items, and cheese in casserole dish.

Pour egg mixture over top.

Chill one hour minimum.


You can use either an 8 x 11.5 or a 9 x 12 Pyrex dish. Just watch the baking time.


Bake 350 degrees, 30 to 40 minutes. Let stand 5 minutes before serving.
