Twice Baked Potatoes

2 large baking potatoes, cooked in microwave

2 Tbls sour cream or butter

1/4 c milk

1/4 tsp garlic powder

1/8 tsp pepper

1/2 c cheddar cheese, shredded

Cut potatoes in half. Scoop out potatoes leaving thick shell.  Set aside.  In medium mixing bowl, combine pulp, sour cream, garlic powder, pepper, milk.  Whip with electric mixer at high speed until smooth. In an 8 inch square baking dish, place potato shells, fill with mixture.  Sprinkle with cheese, and some smoked Paprika if you have some.  Microwave on High 2-3 min until cheese is melted and mixture is heated through.  You may make ahead and freeze them.
